Steak Sandwich with Shishito Chimichurri

The sandwich the chimichurri and the compound butter were made for. The bread fries in shishito butter under the broiler, the onions pick up balsamic on the grill, and the chimichurri goes on last and generous.

Instructions

Grill

  1. Steak. Season the steak with salt and pepper and grill over high heat, about 4 minutes a side, to medium. Rest it on a board with a slice of the Shishito Compound Butter melting over the top.

The steak sliced into thick pink strips, the butter running into the cuts

  1. Onions. While the steak cooks, coat the onion rings in balsamic glaze and grill them alongside until soft and charred at the edges.
  2. Bread. Put the sourdough slices in a 400°F oven to crisp slightly while the steak grills.

Build

  1. Butter and steak. Spread every slice of bread with the Shishito Compound Butter. Slice the steak and divide it over two of the slices.

  1. Onions and cheese. Pile the grilled onions on the steak and lay two slices of provolone over each. Put the open sandwiches back in the oven under the broiler for 2–3 minutes, watching closely, until the cheese melts and the butter on the other slices is bubbling.

Melted provolone draped over the steak and onions, with the other slice spread with green chimichurri

  1. Finish. Spread a healthy amount of the Shishito Chimichurri on the other slices, add a handful of lettuce to each, close them up, and cut in half.

Notes

  • The onions and the steak share the grill; the onions take about as long and can sit at the edge while the steak rests.
  • One strip steak makes two large sandwiches with a little steak to spare.
