Green Onion Cream Cheese BLT

A BLT on good toasted bread with a tangy green onion cream cheese spread, loosened with vinaigrette and a spoonful of bacon grease.

Instructions

Cook the bacon

  1. Heat the oven to 400°F. Lay the bacon out in a single layer on a sheet pan.
  2. Bake until crisp, flipping once halfway through, about 18–20 minutes. Save the grease for the cream cheese mixture.

Make the spread

  1. While the bacon cooks, mix the cream cheese, green onions, vinaigrette, and pepper until thoroughly combined.
  2. Mix a tablespoon of the bacon grease into the cream cheese mixture.
  3. Slice the tomatoes.

Assemble

  1. Toast the bread. Spread a layer of the cream cheese mixture on a slice.
  2. Add some lettuce or microgreens, then the tomatoes. Top with fresh ground pepper and flake salt.
  3. Add several slices of bacon, then another slice of toast spread with the cream cheese mixture.

Notes

  • I use a honey garlic vinaigrette, but any vinegar will work.
  • Variation: spread pepper jelly on one slice of bread.
